Meet Your Power Bowl

This isn’t just a pretty beet salad. It’s a midlife performance bowl disguised as lunch.

Chewy farro, sweet roasted beets, peppery arugula, salty feta, and crunchy walnuts all show up with a job to do: support circulation, brain health, and steady energy. The balsamic and olive oil pull everything together so it eats like something you’d actually look forward to, not a punishment for being an adult. Chef tip, freeze the feta, then grate using a microplane, to get a nice fine layer of cheese covering the whole salad.
